I’m back! It’s been a while and I have had some delicious successes and some dismal fails over the last two weeks. Here’s a slice of the first week.

Day #39 Savory Keto Muffins
The ketogenic diet is a low carb, moderate protein, and high fat diet which puts the body into a metabolic state known as ketosis. When you’re body is in a state of ketosis, the liver produced ketones which become the main energy source for the body. The ketogenic diet is also referred to as low carb diet, and low carb high fat.
So why is it so awesome and why is it taking the world by storm?
Because it completely reverses how your body functions (in a good way) along with changing how you view nutrition. It’s based around the premise that your body was designed to run more efficiently as a fat burner than a sugar burner.
These muffins are high in protein and have no carbs for those of us who at least try to eat healthy once in a while. I added spinach to some, cheese to others, onions, tomatoes, blue cheese and almonds, herbs, etc.. They make a great breakfast item. Grab and go protein and nutrition. These are easy and tasty and I’d definitely make them again. They’re easy to transport and you can add anything to them.
I have a lovely houseguest from Argentina and her boyfriend came to visit and brought me Dulce de Leche from home. (If I’m honest I didn’t use it for THIS recipe but it prompted me to make something dulce de leche.) I learned that you can make dulce de leche from a can of condensed milk. Simply puncture the top of the can (leaving it on) and put it in a pot of slow boiling water for 4-5 hours. Magic!
I had blackberries so I made these delicious ooey gooey bars. They were delish! Everyone who had them loved them. I give them a 4 out of 5 (mostly because they don’t have chocolate lol). The Argentinians were happy with a little taste of home.
Day #41 Hot Buttered Soft Pretzels
Next I tried savory. These pretzels were easy peasy to make, pretty, and very tasty. Alas I forgot to butter the buttered soft pretzels! lol So… they had a matte finish instead of the pretty glossy pretzels I had in my mind (and computer). But they were really good and went fast. It’s amazing how many people you can come up with to give yummy treats to. Jen in my local Starbucks is the newest happy recipient of my concoctions. And I got a free coffee out of it!
Day #42 Buttermilk Blueberry Scones
Now these were amazing! So moist and yummy! I love the blueberry scones at Sbux, but these were WAAAAY better if I do say so myself. I would definitely make them again and you could replace the blueberries with blackberries, chocolate chips, raspberries, strawberries, even cheese. When I do that I’ll let you know how it goes. They were beautiful to boot. Great to bring to someone’s house in a breakfast basket, new neighbor, whatever. Easy to transport and a definite crowd pleaser. 10 on a scale of 1 to 5.
This cake is a stunner! Deep purple indeed. I’ve never seen a purple cheesecake before. Very beautiful and unusual looking. AND… my version is gluten free! You could make it with a graham cracker crust as well. Cheesecake is a great option for your gluten free friends since it has no flour. The lemon flavor really came through and added a nice light fluffy flavor to it. The recipe called for edible flowers on top which I would definitely do if I make it again. So I used lemon rind and blueberries. It was still pretty pretty. I’m not a lover of cheesecake so I give it a 3.75, but I think others liked it more than that.
I thought it would be cool to make something completely in my blender and I had a bunch of bananas that were fading fast so I made these tiny muffins. I learned a while back that the darker the bananas, the sweeter they are so i’ve got a pile of frozen over ripe bananas at my beck and call. I added two chocolate chips to each muffin just cuz. They were simple and didn’t require any bowls, tools, hand mixer blades or anything else. No clean up. No muss no fuss. Little bite size tastes.
This cake is basically an apple sponge cake. Not so glamorous, and kinda boring actually, but I have a Rosh Hashana party where as a part of the bringing in of the Jewish new year we dip apples in honey to bring in the year with sweetness and abundance. So.. I try to make some apple delights each year. I’m glad I tried this one but I think I”ll leave it alone. Just not very attractive or interesting. Just a 3.
Day #46 Gluten Free Marble Snack Cake
Hard to believe this is gluten free but it is and it was delicious. Very much like a chocolate chip cookie brownie. With frosting. I used almond flour instead of gluten free flour. It’s small and yummy. I’d make it again. It’s a nice little party snack. Tastes better than it looks for sure. I give it a 5. Easy peasy.
I am continuing to bake every day (well almost) and I’m learning so many new things. Now I watch baking shows and listen to the critiques very carefully. Like everyone else I’m a huge fan of the Great British Baking Show because I haven’t heard of most things and because I love the way they educate the bakers. So look for some British Bakewells, Puddings, Stroopwafels and such.
